White Bean and Chicken Salad by Kate

The Plan
Whisk a bit.
Stir.

The Ingredients
6 cans white Cannelloni beans, drained and rinsed
1 Red Onion, minced
4 Chicken Breasts, cooked and chopped
1/4 cup Olive Oil
1/2 cup White Balsamic Vinegar
2 cloves Garlic, minced
1 Tbsp fresh Rosemary, minced

The Method
Combine Beans, Onion and Chicken in a large bowl.
In a small bowl, whisk together Olive Oil, Vinegar, Garlic and Rosemary. Pour into Bean mixture.
Stir to combine.

*The is an awesome salad. But it is even more awesome when it sits over night in the fridge.

Yield: 12 Servings
